SIMULATION THEORY

These are LONG-aged Barley Wines. 42-45 month long. Beer that is aged this long not only picks up notes from the barrel – it becomes one with the barrel. Through the 3.5yr+ of aging, the beer also micro-doses on oxygen. This leads to a very rich and unified profile. These beers are completely still to allow for them to continue to develop.

THE BARREL AND BARLEY WINE NOTES MELDED INTO A SINGULAR PROFILE OF RICH TOFFEES, VANILLAS, CARAMELS, DATES, AND CHERRIES
SIMULATION THEORY SERIES CAN BE ENJOYED OVER TIME. ONCE THE CORK HAS BEEN POPPED, POUR YOUR GLASS AND PUSH THE CORK BACK IN ENOUGH TO SEAL BEER FROM OUTSIDE AIR AND STORE AT AMBIENT TEMPERATURES. THESE BOTTLES HAVE GIVEN US GREAT ENJOYMENT UP TO 2 MONTHS AFTER OPENING. THE OXIDATION PUSHES THE BARLEY WINE TO HAVE MORE FRUIT AND SWEETER NOTES.

THIS BARLEYWINE DEVELOPED FULLY IN A BOURBON BARREL, THEN WE FINISHED IT IN AN OLOGY SOLAR FLARE BARREL FOR LIGHT ORANGE BRIGHTNESS AND BITTERNES
